Dirler-Cade is a great Alsatian producer. His wines are all created according to biodynamic methods and his riesling is truly a delicacy. The Sylvaner but did not make me mad. To put it better: from a vendor like this I expected much more. The conclusion
to which I have reached is that it was closed because a wine is still much too young, not thinking it could be otherwise. We're talking about old bottles that have many years to be able to fully express their potential. This
Sylvaner did not offer great feeling just opened: I was expecting an explosion of aromatic scents, but calm. In the mouth, then very little acidity and taste very weak.
The bottle has been open for about two hours and something has changed. The wine has improved but nothing shocking. Very dry in the mouth with a light lemon final. Balanced but weak overall.
deserves a second chance.
Perfect with spicy cheese hard cheese.
